Have you ever had plantains? The first time I remember being introduced to this banana-like fruit was after visiting the home of some friends from Ghanna. After that I started buying plantains. Unfortunately my family isn’t as interested in ethnic foods as I am. This is how I eat them.
Plantains look almost exactly like bananas but they are not the same. The only way I eat them is to wait till the skin is blackening with ripeness, then I peel them (the plantain is very thick and stable- unlike a very ripe banana). Then cut them in thick pieces like I show.
While you’re cutting up the plantain get some oil heated up nice and hot in a good pan. Then fry until golden brown. Flip over as necessary, then move the plantains to a plate with a paper towel to soak up the excess oil. Again- these aren’t bananas!
Sprinkle with powdered sugar if you want (but they just as good or even better without) and eat them while they are still warm…yummm!
