Years ago I received this recipe from a friend and began making it. Its so good that I’d have family asking me to bring it to future family functions. Did I mention how easy this is?
Baked Corn Casserole
Mix the following together in a bowl:
2 eggs
1 stick of butter
8 oz. sour cream
1 box of Jiffy Corn Muffin mix
1 (16 oz.) can creamed corn
1 (16 oz.) bag of frozen corn or 2 (16 oz.) cans of whole kernel corn, drained
After mixing, pour into a greased casserole dish. Bake at 350 degrees for 55-60 minutes.
This is a great side dish to make for a large gathering and is also a great fall-time comfort food!

I’ve made this recipe before too, it is SOOO good. I made a similar one on Thanksgiving and everyone like it too. It was called Basil Scalloped Corn from the Pillsbury website.
