I haven’t made these yet but I think I may try them this week. Thus, no picture for you. To see the 1784 Applejacks cookies we made go here.
1784 Colonial pine Tree Shillings
Cream Together:
1/2 cup light molasses
1/4 cup packed brown sugar
1/4 cup of lard (I’m using shortening)
Stir together:
1 1/2 cup all-purpose flour
1/2 tsp. ground cinnamon
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. ground ginger
Blend into creamed mixture. Divide into 6 portions. On lightly floured survace, shape into 6 (10 inch) logs. Wrap, chill several hours. Slice into 1/4in. thick pieces. Places on greased cookie sheet. Press thumb lightly into each piece, bake 350 degrees for 5-8 minutes. Makes 16 dozen cookies.
